Kids in the Kitchen and Strawberry Pancakes

Jeanette Terry from Wild Abandon Kitchen is joining us today with a great idea for getting your kids involved in the kitchen!

In spite of cooking for a living, I still have very typical kids who are opinionated and sometimes picky. I like to tell myself they will grow into a better appetite and appreciation for food if we keep trying. Our six-year-old is definitely much better than when she was a toddler. One thing that helps is asking for her input on the menu and then inviting her to prepare the meal with me. Of course, if the menu involves pancakes, it's sure to be a hit!

Here is one of our favorite pancake recipes with a few healthy additions like whole wheat flour and fresh strawberries. Local strawberries will be ready for picking before we know it. The sour cream helps to create a light and fluffy cake and I like to cook them in coconut oil for the perfect crispy edge.

Strawberry Whole Wheat Pancakes

  • 1 cup all purpose flour
  • 1 cup whole wheat flour
  • 4 tsp baking powder
  • 2 TBS sugar
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 1 cup milk
  • 1/2 cup sour cream
  • 2 eggs
  • 2 TBS melted butter
  • 1 cup chopped strawberries

Combine all ingredients and cook in coconut oil over medium heat. Makes approximately 16 pancakes.
